Food blogging can be pretty frustrating at times, but especially when you've made a recipe that tasted great, but the photos didn't really make the food look good. And years ago I made this Slow Cooker Balsamic Pork Roast and posted it with photos that were kind of ho-hum. The pork roast was delicious and a surprising number of people still made it, but I am SO happy to be updating the post with better photos!
When we updated the photos we decided to skip the red onions that cooked along with the pork in the original version, but I will still include that in the recipe for anyone who was a fan of that. And I used pork loin roast for a larger roast, but you can also make this with one of those very inexpensive and lean pork sirloin tip roasts that come in a four-pack at Costco. Get out your slow cooker and make this tasty pork loin roast! You'll love this for an easy dinner idea.
What ingredients do you need for this recipe?
- pork loin roast
- Rosemary and Garlic Herb Rub, or other rub that's good on pork
- olive oil
- beef broth, simmered to reduce
- 1/4 cup balsamic vinegar
- red onions, cut into thick slices and separated into rings (optional)

What size slow cooker did I use?
I used a Crock-Pot 3 Quart Slow Cooker (affiliate link) for this recipe, but a slightly larger size will also work fine.
How to Make Slow Cooker Balsamic Pork Roast:

- We started by making Rosemary and Garlic Herb Rub to season the pork roast. (Any seasonings with similar ingredients can work.)
- I trimmed most of the fat from the pork loin roast.
- Then we rubbed it on all sides with about one tablespoon of the rub.
- Then we heated some olive oil in a large frying pan and browned the roast well on all sides.
- Put the roast in the slow cooker, then deglaze the pan with the beef stock and simmer to reduce by half..
- Then add the balsamic vinegar, reduce heat to medium, and cook about 5 minutes.
- Pour the liquid over the roast in the slow cooker and cook for about 2 hours on high (or 4-5 hours on low).
- If you're home turn the roast over, and cook it for about 60-90 minutes more on high. (Add sliced red onions on top of the meat if you're using them.)
- The pork is done when it reaches 145F-65C on an Instant Read Meat Thermometer (affiliate link); start testing it after about 3 hours.
- Remove pork to a cutting board and let it rest about 5 minutes. (Cover with foil to keep warm if you like.)
- You might want to use a Fat Separator (affiliate link) to remove fat from the cooking sauce, or put liquid back into the frying pan and simmer to reduce for about 20 minutes so the flavor is a little more concentrated.
- Then slice the meat, arrange on serving plate, and serve with the sauce. Serve hot.

- Then add the balsamic vinegar, reduce heat to medium, and cook about 5 minutes.
- Pour the liquid over the roast in the slow cooker and cook for about 2 hours on high or 4-5 hours on low. (Add sliced red onions on top of the meat when it's partly done if you're using them.)
- The pork is done when it reaches 145F-65C on an Instant Read Meat Thermometer (affiliate link) if you want to start testing it after about 3 hours.
